Types of Cognac:
VS Cognac: The term 'VS' is short for 'Very Special' and refers to blends of Cognac where the youngest spirit is aged a minimum of two years. VS cognacs are fresh, lively and vibrant, making them great with mixers or in cocktails.
VSOP Cognac: The term 'VSOP' is generally understood to stand for 'Very Special Old Pale', although the Bureau National Interprofessionnel de Cognac lists the official definition as 'Very Superior Old Pale'. Either way, these cognacs are aged for a minimum of four years and are great in quality cocktails or sipped neat or over ice.
XO Cognac: XO cognacs must be aged a minimum of six years, although many producers use much older spirits in their assemblages. XO cognacs benefit from this extended wood ageing, and are generally extremely smooth and rich in flavour. This means they are unsuitable for all but the most premium cocktails and are generally best served neat after a good meal.
Special Cuvee :Special Cuvées are cognacs that are not labelled with the standard classifications of VS, VSOP and XO. Included in this section are Napoleon and Extra cognacs (aged, like XOs, a minimum of six years before bottling) alongside a great variety of vintage cognacs and other proprietary bottlings.
